    As a chef you should know that drinking water - no matter how cold it is - does not stop the chilli heat in your mouth. The only things that will help are plain boiled rice, milk or bread. While beer is great to eat with Thai food it doesn't lower the heat in your mouth.

    Just a correction, coconuts can mature from as early as 4 years, they also produce anywhere from 1-100 every 6-8 weeks once the conditions are right for fruit bearing.

    This is so depressing, Sorry. I took my mates on a massive all day bike ride around Bang Krachao in 2016. We were almost the ONLY falang there it seemed. We went on the wrong day for the markets (rookie mistake) so i actually came back again the next year with a diff mate and we had Gak Fruit juice, boat noodles, and Found a half built hindu Ganesh temple (*which many years laters looks a LOT more complete). Even the Google Satellite images of this island now show a story of vanishing Greenery, receding nature. But i guess change is constant. We cannot stop it. I'll be back next March with 2 completely different friends yet again, and this video has put some urgency i to me to bring them to Bang Krachao as well.

    Real indigenous Siamese (Mon-Khmer) food are just plain simple white rice, boil vegetables, eggs, and prahok tram (smashed grill fish, eggplants, and peppers together). All of this Lao Lao influence is relatively new to the Siamese society as whole 😂.

    What a misleading way to start your research! First of all, understand two things: 1. "Curry" is a Tamil word that entered the English language in the 16th century via Portuguese, as per "BBC" and many English Dictionaries, including Oxford. Tamil is one of the oldest language in the world and so their curry culinarily tradition is oldest too. 2. The East India Company, which played a significant role in shaping modern India, was formed in the 17th century. India as a legally recognized entity was established in 1858 when British crown took it over; it did not exist as a unified country before then. Columbus got that wrong and in modern information era, it is frustrating you got it wrong too. It was only British who carved out British India out of Indian Subcontinent while, in the same continent, there were French and Portuguese colonies too. Other Tamil words in English Language are, Mango, Mulligatawny, Rasam, Papadum and Congee. Tamils are in two traditional habitats, one in Southern India and other in North and East of Sri Lanka. Both British Ceylon and British India were output of British colonisation. Curry research is incomplete without understanding the its links to the Tamils and their two traditional habitats and the influence of Portuguese, Dutch, Danish, French and British colonisation for 450 years when the curry went through a renaissance. The Portuguese introduced chili to the Tamil people, transforming the local cuisine, including curry. The Portuguese then spread this chili-influenced curry to Thailand, Japan, and China via Macau. You cannot discuss curry without acknowledging its Tamil origins, where it remains an integral part of the culture for 3200 years with evidence. Haggis, the Scotland's national dish can't be referred as a British dish as the Union came into existence in 1707. In the same way, curry of the Tamils, predates any nations: India (1858), Ceylon (1833), Pakistan (1947) and Bangladesh (1971). For more information, check out thatscurry.com

    There are no ‘jungles’ or ‘tropical rainforests’ on Bangkrajao my friend. That’s a huge exaggeration. Yes it’s tropical cause it’s Thailand but it’s almost all gardens, small farms, residential areas, markets etc. there are pockets of mangroves riverside but there are no jungles. Yes it’s a beautiful place and yes there’s lots of good food. But no jungles and no rainforests to speak of.

    One thing I find fascinating is that I've never seen a Thai chain restaurant. There is no Thai equivalent of Jollibees or Panda Express. Every single Thai restaurant I've encountered is just a small, individually or family owned restaurant. That's pretty cool to me.

    Egusi is roasted melon seeds and the dough can be made with grains like millet, and guinea corn which are low GI grains, the reason why most African countries have low TD2 rates.
